1 tablespoon flaxseed
3 ounces Shelled peanut (roasted and salted)
1 Vanilla bean
3 ounces vegan Margarine
3 ounces Raw cane sugar
9 ounces Spelt flour
1 teaspoon Baking powder
3 tablespoons Peanut butter (crunchy)

Preparation steps

1.

Grind flaxseed in a small food grinder and soak in 3 tablespoons of water.

In the meantime, roughly chop the peanuts. Cut the vanilla pod in half lengthwise and scrape out the pulp with a knife.

Cream margarine with 5 Tablespoon whole cane sugar. Mix flour, baking powder, and vanilla pulp and stir into the margarine sugar mixture with linseed and peanut puree. Knead everything with 1-2 tablespoons of water to a smooth dough and cover and leave to cool for 30 minutes.

Line a baking tray with baking paper. Form the dough into a roll, cut off slices about 1/2" inch thick and place cookies on the baking tray. Press a few peanuts into each cookie and sprinkle with remaining whole cane sugar. Bake cookies in a preheated oven at 180°C / 350°F for 13-15 minutes.
