A cheese sauce is probably neither in the classic nor in the vegan version a super-healthy food, yet we can consciously enjoy it from time to time. The yeast melt scores points nevertheless with the contained spice turmeric, which protects us from free radicals by secondary plant substances and has an anti-inflammatory effect. The yeast flakes in the vegan cheese substitute not only provide a spicy taste, but also contain a lot of nerve-strengthening B vitamins, just like baking yeast.

The yeast melt is versatile: you can serve it as a vegan dip with nachos, oven chips or bread, pour the sauce over cooked wholemeal pasta and you get a delicious pasta with cheese sauce. You can also use yeast melt as a vegan cheese substitute for gratinating and, for example, drizzle it on a pizza and bake it as usual.

Melt margarine in a pot, stir in flour with a whisk, add 8 ounces water. Then stir in yeast flakes with mustard, salt, pepper and turmeric and bring to the boil. Let simmer until a firm cream is formed.
