Veal Wraps with Orchard Fruit
Cut most of the goats' cheese into cubes and then wrap them in the slices of veal so that they resemble fingers.
Cut half of the fingers in half and dip the ends in a little black pepper.
Assemble on a serving platter and garnish with the raspberries and sprigs of dill.
Finely shave the remaining goats' cheese. Rest the shavings against the veal and goat's cheese fingers. Serve cold with quince pate on the side.
