500 grams Veal shank (from the leg)
1 bunch Soup vegetables (such as carrot, leek, parsnip or other aromatic vegetables such as celery or onion)
1 garlic clove
1 bay leaf
1 l Chicken broth
¼ l white wine
1 bunch parsley
1 egg yolk
4 Anchovy fillet
1 can Tuna (with the juice)
3 Tbsps Caper
2 Tbsps vegetable oil
100 grams Whipped cream
1 organic lemon
salt (and pepper)

Preparation steps

Rinse meat and pat dry. Rinse soup vegetables and chop coarsely. Peel garlic. Bring everything to boil once in the chicken broth with bay leaf, season with salt and pepper and then simmer gently 1½ hours. Pour in white wine, add parsley and leave the meat in the broth to cool for about 6 hours.

For the sauce, puree the yolk with anchovies, capers and tuna (with juice). Gradually whisk in the oil. Add 5 tablespoons of the veal broth. Beat cream until stiff and fold in with the juice of half a lemon. Season with pepper. Cut veal into thin slices and serve with lemon slices on a plate.

Top with the tuna sauce and garnish with mint.
