4 slices veal shin
2 tablespoons all-purpose flour
2 tablespoons olive oil
1 cup white wine
1 cup meat Broth
5 cups beefsteak tomatoes (peeled, halved)
6 sprigs thyme (leaves)
4 tablespoons butter
2 onions (sliced in rings)
2 tablespoons butter

Preparation steps

1.
Season the veal slices with salt and pepper and sprinkle with flour.
2.
Heat 2 tbsp oil in a pan and brown the slices on both sides. Pour on the wine. Reduce by half and add a little broth. Cover and cook for approx. 2 hours, adding a little more broth when necessary.
3.
Add the tomatoes and thyme to the meat. Braise for a further 30 minutes until done.
4.
Heat the butter and fry the onion rings gently for approx. 10 minutes until golden brown.
5.
Just before serving, arrange the onion rings over the veal and season everything with salt and pepper.
