Preparation steps

1.

Rinse the veal shank, pat dry and rub with salt and pepper.

2.

Heat the clarified butter in a casserole dish and fry the meat on both sides until light brown.

Place the lid on the dish and stew for about 1 hour in a preheated oven at 200°C (approximately 400ºF). In the last 15 minutes, open the pot and pour the juices over the meat.

Serve hot.
