2 Tbsps vegetable oil

2 ripe Avocados
2 Tbsps lemon juice
½ tsp Wasabi

Preparation steps

Preheat the oven to 100°C (approximately 212°F).

Heat the oil in an ovenproof skillet. Rinse the veal, pat dry, add to the skillet and saute on all sides. Sprinkle with paprika, season with salt and pepper and roast until pink (medium-rare to medium), 45-55 minutes. Remove from the oven, let cool and thinly slice.

Halve the avocados, remove the pits and the skin and finely dice. Set 1/3 of the diced avocado aside. With a fork, mash the remaining avocado in a bowl with lemon juice and wasabi. Season with salt and pepper. Spoon the avocado onto the veal and roll up.  Arrange the rolls on a plate and serve garnished with parsley, red pepper flakes and diced avocado.
