800 grams Veal fillet (or loin)
1 Tbsp medium hot Mustard
3 sprigs Sage
freshly ground peppers
16 slices Prosciutto
8 fresh garlic cloves
4 Tbsps olive oil
4 Tbsps lemon juice

Preparation steps

Preheat the oven to 200 ° C convection.

Rinse meat, pat dry and cut into 16 thin slices. If necessary, flatten slightly. Spread each slice with a little mustard. Rinse  sage, shake dry and pluck off leaves. Top each cutlet with 1-2 sage leaves, season with pepper and roll up. Cover with 1 sage leaf and wrap in a slice of ham. Place 4 rolls on a large piece of parchment paper, repeat process 3 more times with remaining rolls. Peel and halve garlic and arrange around meat. Season with pepper, drizzle with oil and lemon juice. Fold paper tightly and secure (for example, with paperclips). Place on a baking sheet and bake in preheated oven at 200°C (approximately 400°F) for about 15-20 minutes.
