- 1 kilogram Veal goulash
- 2 onions
- 2 garlic cloves
- clarified butter (for cooking)
- 2 Tbsps Pastry flour
- 600 milliliters Veal stock
- salt
- freshly ground peppers
- 1 Tbsp Caper
- 200 milliliters Whipped cream
Preparation steps

Rinse the meat, pat dry and cut into 2-3 cm (approximately 1 inch) cubes. Peel and chop the onions and garlic. Working in batches, brown the meat in hot butter then remove from the pot. Sauté the onions and garlic until golden brown in 1 tablespoon hot butter then sprinkle with flour. Cook until light golden brown and nutty then deglaze with a little stock. Return the meat to the pan, season with salt and pepper and simmer, stirring, for about 1 hour 30 minutes, stirring occasionally.

Mix in 150 ml (approximately 2/3 cup) cream and the capers and season with salt and pepper.

Distribute between serving bowls and drizzle with the remaining cream.

Serve with dumplings, if desired.
