250 grams Goat cheese (in slices)
1 sprig thyme
1 untreated lemon
salt
freshly ground peppers
2 tablespoons olive oil
2 centiliters Orange liqueur
1 teaspoon honey
thyme (for garnish)

Preparation steps

Rinse fillets, pat dry and cut into four slices. Press flat and cut a horizontal pocket. Fill with goat cheese and thyme leaves. Rinse lemon in hot water, wipe dry and finely grate zest. Squeeze juice from lemon.

Season meat with salt and pepper and fry 1-2 minutes in hot oil on both sides until golden brown. Remove veal from the pan and deglaze with liqueur, lemon juice, a little water and honey. Deglaze the pan and place the meat back. Sprinkle with lemon zest. Cover and cook 6-8 minutes until veal is cooked. Add salt and pepper to taste, serve with sauce on plates and serve garnished with thyme.
