2 Veal cutlets (125 grams)
1 Tbsp Pastry flour
1 egg white
salt

2 Tbsps butter
1 Tbsp fresh Currants
150 grams mixed Lettuce
1 Tbsp White vinegar
1 Tbsp olive oil
1 generous pinch Mustard

Preparation steps

Trim, rinse and spin dry the lettuce. Stir together the vinaigrette vinegar, olive oil, mustard, salt, pepper and a pinch of sugar. Set the vinaigrette aside. Use a zester to strip the lemon zest from the lemon, then cut in half. Cut 3 slices and set aside for decoration. Squeeze out the juice from the rest of the lemon.

Season cutlets with salt and pepper. Mix egg white with the flour, dip the cutlets in the mixture and fry until golden brown in hot oil on both sides. Melt the butter in a small pan until foamy. Fry the zest strips in it, pour in the lemon juice, add the currants and cook briefly until warm.

Toss lettuce with dressing and place on a platter. Arrange the cutlets with lemon slices beside the salad and drizzle with the lemon butter and currants. Garnish with lemon slices and serve.
