800 grams Ground veal
125 grams smoked Bacon (finely diced)
1 shallot (finely chopped)
2 tablespoons finely chopped parsley
200 grams finely chopped button Mushroom
clarified butter
salt

breadcrumbs
4 Ramekins (plastic)
1 kilogram Swiss chard (rinsed, trimmed and cut into strips)
For the sauce
1 tablespoon Pastry flour
1 tablespoon butter
125 milliliters milk
125 milliliters Vegetable broth (instant)
salt
freshly ground peppers
Nutmeg

Preparation steps

1.

Cook shallot and bacon until translucent. Add shallot and bacon to a bowl and combine with ground veal, mushrooms and parsley. Season with salt and pepper and mix well.

To make cutlets: Transfer breadcrumbs to a plate. Form mixture into large, flat cutlets and dredge on both sides in breadcrumbs.

Fry cutlets in butter until golden-brown, 5 minutes per side.

Blanch chard in salted boiling water about 3 minutes. Remove, and rinse with cold water. Let drain.

To make the bechamel sauce: In a pan, melt butter. Stir in flour until bubbly. Whisk in milk, then broth. Simmer for a few minutes. Season with salt, pepper and nutmeg.

Add chard to bechamel sauce. Cook until heated through, season with salt and pepper, and serve with cutlets.
