- 80 milliliters vegetable oil
- 4 Veal cutlets (about 140 grams or 5.3 ounces)
- salt
- 100 grams Cheese (about 30 grams or 1 ounces; such as: Emmentaler, Gruyère and raclette cheese)
- 4 slices cooked ham
- 60 grams Pastry flour
- 2 eggs
- ½ tsp finely grated untreated Lemon peel
- 150 grams breadcrumbs
- Lemon wedge (for garnish)
Preparation steps
1.
Brush 2 pieces of plastic wrap with oil. Pound veal between plastic wrap until thin. Season veal with salt. Cut cheese into strips and wrap each piece with ham. Place ham on veal and roll up.

Put flour in a deep plate. Beat eggs and lemon peel in a deep plate. Place breadcrumbs in a deep plate.
3.
Dredge stuffed veal cutlets first in flour, then in egg mixture and finally in breadcrumbs and press lightly.
4.
Heat remaining oil in a wide pan over medium heat. Fry coated veal on both sides until golden brown, about 3 minutes. Remove and drain on paper towels.
5.
Season with salt and serve garnished with lemon wedges.
