- 4 Veal cutlets (about 150 grams or approximately 5 oz each)
- 4 slices cooked ham
- 100 grams Cheese (sliced, such as Emmental, Gouda)
- 2 eggs
- salt
- freshly ground peppers
- 100 grams Pastry flour
- 150 grams breadcrumbs
- 2 Tbsps clarified butter
- 1 lemon (cut into strips)
Preparation steps
1.
Rinse the cutlets, pat dry, place between 2 layers of plastic wrap and pound flat, then cut in half.

Place a slice of ham and cheese on top of each piece of veal cutlet.
3.
Fold around the stuffing and secure with toothpicks.
4.
Break the eggs in a plate, add salt and pepper and beat with a fork.
5.
Roll the cutlets first in flour, then in the beaten egg and finally in breadcrumbs. Press the breading firmly to coat completely.
6.
Fry in hot clarified butter until golden brown, remove, drain on paper towels and serve with lemon wedges.
