Preparation steps

1.

Rinse the zucchini and eggplant and cut into slices. Trim the mushrooms and cut in half. Saute everything in 4 tablespoons olive oil, remove each from the pan and place in a bowl. Season with vinegar, salt and pepper and let stand approximately 20 minutes.

Rinse the tomatoes, remove stem and cut into wedges. Peel the onion, cut into rings and add to the tomatoes. Mix with 2 tablespoons olive oil and sprinkle with salt and pepper.

3.

Halve the melon, remove the seeds and cut into wedges.

4.

Arrange everything on plates and serve with grissini (breadsticks).
