Vanilla Tarts with Berries
- For the topping
- 500 grams mixed Berry
- For the filling
- 400 milliliters milk
- 1 Vanilla bean
- 4 egg yolks
- 80 grams sugar
- 25 grams Pastry flour
- 1 pinch salt
- sugar (to sprinkle)
Pour the flour onto the working surface, mix with sugar and salt and make a well in the center of the flour. Cut the cold butter into small pieces to distribute around the well, place the egg in the center and mix all the ingredients together until crumbly. Quickly knead into a dough with your hands, form it into a ball, then wrap in plastic wrap and chill for about 30 minutes.
Place the dough between 2 layers of plastic wrap and roll out until thin.
Grease the tart tings, then fill each tin with the batter.
Bake at 150°C (approximately 300°F) for about 25 minutes, or until golden brown. Carefully remove the crusts from the molds and leave to cool.
For the filling: cut the vanilla pod open, scrape the vanilla seeds out, stir the pod with the milk and bring to a boil.
In a bowl, beat the yolks with the sugar until creamy, then mix in the flour.
Stir the boiling milk gradually into the egg yolk mixture, then pour everything back into the pot. Fish out the vanilla pod and thicken over a low flame, stirring constantly (do not let boil!).
Spread the custard through a sieve, let cool. While the surface is thin, sprinkle with sugar so that a film forms.
Rinse and pat dry the berries. Fill the tart with the cold filling and spread the berries on it.
