½ l milk
1 Vanilla bean
8 sheets white gelatin
5 egg yolks
120 grams sugar
400 milliliters Whipped cream

Preparation steps

1.

Pour the milk into a large pot and bring to a boil. Cut the vanilla pod, scrape out the seeds and add along with the pod into the boiling milk.

Soak the gelatin in plenty of cold water.

Beat the egg yolks with the sugar in a large bowl over hot water bath until the mixture becomes creamy white.

Remove the pod from the milk and stir the milk slowly into the egg yolk mixture. Beat again over hot water bath. The mixture must not get too hot!

4.

Squeeze the gelatine and dissolve gradually into the hot yolk-milk mixture while stirring. Place the bowl in a larger bowl of ice water and allow the yolk-milk mixture to cool with stirring.

5.

Whip the cream and fold into the yolk-milk mixture just before the it begins to gel.

6.

Pour the yolk-milk mixture into a water-washed mold and leave to set in the refrigerator.

7.

Before serving, place the mold in hot water and plunge out the pudding. Serve with apricot compote.
