250 grams Mascarpone
200 grams Quark
6 tablespoons sugar
3 tablespoons water
2 tablespoons halved almonds

Preparation steps

1.

Halve the grapes, rinse, remove the seeds, mix with the amaretto and sugar and let stand.

Slit the vanilla beans lengthwise and scrape out the seeds. Mix the vanilla seeds, mascarpone and quark. Add sugar to taste.

Pour the grapes and cream into 4 ramekins. Chill for several hours.

Line a work surface with parchment paper.

Roast the almonds in a dry frying pan.

Mix the sugar and 2 tablespoons of water in a small pot. Bring to a boil, stirring constantly, until the water has evaporated. Remove from the heat once the sugar has caramelized. Pour the caramel onto the parchment paper and let cool.

Divide the caramel into 4 parts.

8.

Serve the vanilla mousse with the caramel and grapes.
