200 grams Strawberries
30 grams sugar
1 Tbsp butter
1 Tbsp powdered sugar
60 grams chopped Hazelnuts
300 milliliters milk
1 Tbsp cornstarch
2 Tbsps Vanilla sugar
3 egg yolks
100 milliliters Whipped cream
mint (for garnish)

Preparation steps

Rinse, trim and cut the strawberries into small pieces. Sprinkle 1 tablespoon of sugar over the strawberries and set aside. Heat the butter in a small saucepan, sprinkle in the powdered sugar and let caramelize slightly. Add the hazelnuts to the caramel and swirl, remove from the pan, spread on a plate and allow to cool.

Set aside 50 ml (approximately 3 Tablespoons) milk. Boil the remaining milk with the sugar and remove from heat. Mix the cornstarch and vanilla extract with some of the reserved milk and egg yolks until smooth. Stir into the milk and heat gently while stirring (do not boil!) until the mixture is creamy. Allow to cool, stirring occasionally. Beat the cream until stiff and fold into the cooled cream.

Spoon approximately 1 tablespoon of hazelnuts into the glasses and top with about half of the vanilla cream. Sprinkle in the remaining hazelnuts and half the strawberries and top with the remaining cream. Top with the remaining strawberries and garnish with mint.
