Vanilla Cupcakes with Daisies
- For the batter

- 150 milliliters
Preheat the oven to 180°C (approximately 350°F). Grease the wells of a muffin tin with butter and sprinkle with flour.
For the batter, slit the vanilla bean lengthwise and scrape out the seeds. Beat the butter, sugar, vanilla seeds and lemon zest until creamy. Gradually stir in the eggs and a pinch of salt. Mix the flour, nuts, baking soda and baking powder. Alternately stir the flour mixture and the milk into the egg mixture. Pour the batter into the muffin tin and bake for about 25 minutes, until a toothpick inserted into the center comes out clean.
Remove from the oven, remove from the muffin tin and cool on a wire rack.
For the decoration, beat the butter and sugar until creamy. Stir in the cream cheese. Stir in powdered sugar until the desired consistency is reached. Pour the cream into a piping bag with a round nozzle. Decorate the cupcakes. Garnish with colored sprinkles and daisies. Serve immediately.
