100 grams ground almonds (blanched)
75 grams sugar
200 grams cold butter

Preparation steps

Halve the vanilla pod lengthwise and scrape out seeds. Mix flour with almonds, sugar, butter (cut into small pieces) and vanilla. Quickly knead into a smooth dough. Separate into 3-4 portions and roll into log shapes measuring 2-3 cm (approximately 1 inch) in diameter. Wrap in plastic wrap and chill for 1 hour.

Preheat oven to 180°C (approximately 350°F).

Cut rolls of dough into thick slices about 1 cm (approximately 1/2 inch) thick.

Shape into crescents and place on a baking sheet lined with parchment paper. Bake for about 15 minutes or until golden.

Remove from baking sheet using parchment. While still warm, roll crescents in vanilla sugar. Cool completely and serve.
