100 grams sugar
250 grams Pastry flour
2 Vanilla bean (seeds)
200 grams cubed butter
100 grams ground almonds
1 pinch salt

Preparation steps

In a bowl, stir the sugar with the vanilla bean seeds.

Remove 70 grams (approximately 1/4 cup) of the vanilla sugar and place in a bowl. Knead in the flour, butter, almonds and salt until a smooth dough is formed. Shape into a disk, wrap in plastic wrap and refrigerate for 30 minutes.

Shape the dough into a log. Divide the log into walnut-sized pieces and shape each piece into a crescent. Place the crescents on a parchment-lined baking sheet. Bake in a 180°C (approximately 350°F) oven for 10 minutes. Remove from the oven and allow to cool slightly.

In a bowl, stir the remaining vanilla sugar with the powdered sugar. Roll the warm crescents into the sugar mixture until thoroughly coated.
