Vanilla Crescent Cookies
In a bowl, stir the sugar with the vanilla bean seeds. Remove 70 grams (approximately 1/4 cup) of the vanilla sugar and knead with the flour, butter, almonds and salt until a smooth dough is formed. Shape the dough into a disk, wrap in plastic wrap and refrigerate for 30 minutes.
Roll the dough into a log. Divide the log into walnut-sized pieces. Shape each piece into a crescent and place on a parchment-lined baking sheet. Bake in a 180°C (approximately 350°F) oven for 10 minutes. Remove and allow to cool slightly. While still warm, roll the crescents in the vanilla sugar and powdered sugar.
