For the pastry
1 egg
1 teaspoon Vinegar
2 tablespoons vegetable oil
150 grams Pastry flour
1 pinch salt
1 teaspoon sugar
For the filling
1 packet vanilla pudding mix (for 500 ml of liquid) (approximately 2 cups)
500 milliliters milk
3 tablespoons sugar
powdered sugar (for dusting)
3 Apple
1 tablespoon lemon juice
200 grams Sweet cherry

Pastry flour (for dusting)
3 tablespoons powdered sugar (for dusting)

Preparation steps


For the dough: Mix the egg with the vinegar, 2 tablespoons lukewarm water and oil together in a measuring cup. Combine the flour, salt and sugar in a bowl. Slowly add the liquid while mixing with the dough hook attachment.


Knead the dough vigorously for about 15 minutes, until smooth, elastic and shiny. Place the dough on a floured work surface and flatten to remove the air. Cover with plastic wrap and let rest in a warm place for about 30 minutes.


Preheat the oven to 200°C (approximately 400°F). Line a baking sheet with parchment paper. Whisk the pudding powder with 3 tablespoons milk until smooth. Bring the remaining milk with the sugar to a boil in a pot then slowly whisk in the pudding mixture. Continue whisking until thickened, transfer to a bowl, sprinkle with powdered sugar and let cool. Rinse the apples, cut into quarters, remove seeds and cut into small pieces. Immediately sprinkle with the lemon juice.


Rinse, pit and halve the cherries. Divide the pastry into 2 equal portions, roll out on a floured work surface then pull dough as thin as possible with your fingers. Layer the dough pieces together. Spread the pudding over the inside, leaving a small border free. Cover with the fruit then roll the dough up into a strudel. Place on the prepared baking sheet and bake until golden brown, about 30 minutes. Remove from the oven, let cool briefly and serve dusted with powdered sugar.
