1.333 cups fresh or frozen Raspberries
1 Vanilla bean (cut in half lengthways, seeds scrapped out)
2 cups whipping cream (at least 30% fat)
3 Tbsps sugar
5 sheets white gelatin

Preparation steps

1.
Put the cream, sugar, vanilla seeds and the pod in a pot and cook on a low heat for approx. 8 minutes.

Soften the gelatine in a bowl of cold water.
3.
Take the vanilla pod out of the pot and remove the pot from the heat. Wring out the gelatine and add it to the vanilla cream stirring constantly until it dissolves.
4.
Rinse 4 moulds in cold water and fill with the vanilla cream. Let cool for 5 hours.
5.
Puree the raspberries and sieve. Knock the panna cotta out onto dessert plates and serve with the raspberry sauce. If desired, dust with icing sugar.
