Upside Down Apple Tart
- For the crust
- 50 grams butter (cold)
- 125 grams finely ground Spelt
- 1 egg
- 1 pinch Sea salt
- 1 tablespoon Acacia honey
- Pastry flour (for kneading)
For the crust: Put flour on work surface. Create a well and add butter, egg, salt and honey. Quickly knead to for a smooth dough. Wrap in plastic wrap and chill.
For the filling: Rinse, peel, half and core apples. In an oven-safe pan over medium heat, combine honey, butter, vanilla, lemon juice and cinnamon. Stir to caramelize. Remove pan from heat and let cool slightly. Place apples, cut side up, in pan. Roll out dough on a floured surface to a circle of about 25 cm (approximately 10 inches). Place dough over apples and press down between apples nad pan wall.
Preheat an oven to 180°C (approximately 350°F) and bake for about 35 minutes. Bake until golden brown. Cover with aluminum foil if crust gets too dark.
Remove tart from oven and immediately flip into a prepared pie plate. Serve warm or cold.
Tip: The warm cake tastes very good vanilla ice cream.
