Two Citrus Puddings for Diabetics

- 1 cup cream cheese
- 1 ½ cups plain Greek yogurt
- 2 tsps honey
- 1 unwaxed lemon (finely grated zest and juice)
- yellow Food coloring
- 1 unwaxed Lime (finely grated zest and juice)
- green Food coloring
- 5 ozs sugar-free Biscuit (coarsely crushed)
- 4 Tbsps chopped Nut (almonds, pecans, hazelnuts)
Beat together the cream cheese, yoghurt and honey until light and creamy. Transfer half the cream to another bowl.
Add the lemon zest and 1-2 tsp juice to one bowl and stir well. Add a few drops of yellow food colouring. Stir well.
Add the lime zest and 1-2 tsp juice to the other bowl and stir well. Add a few drops of green food colouring. Stir well.
Divide the lemon cream between 4 glasses.
Mix together the crushed biscuits and nuts. Reserve a little for the topping.
Sprinkle a layer of the biscuit mixture over the lemon cream.
Spoon the lime cream on top. Sprinkle with the reserved biscuit mixture. Chill for at least 1 hour.
Serve topped with a spoonful of whipped cream and decorate with thin slices of lime and lemon.
