2 ¼ cups all-purpose flour
¾ cup sugar
1 teaspoon vanilla extract
1 pinch salt
cup butter
2 eggs
1 tablespoon chopped Candied cherry
1 ½ cups chopped almonds

Preparation steps

1.
Mix the flour with the sugar, vanilla, and salt in a mixing bowl. Rub in the butter until the mixutre resembles breadcrumbs. Beat in the eggs.

Stir in the cherries and almonds and mix to a soft dough. Wrap in cling film and chill for 30 minutes.
3.
Heat the oven to 200°C (180° fan) 400°F gas 6. Line a baking tray with non-stick baking paper.
4.
Divide the dough into 6 pieces and form rolls 25 cm|10" long. Place apart on the baking tray and bake for 15 minutes. Allow to cool slightly, then cut the rolls diagonally into slices.
5.
Bake for a further 10 minutes until golden and crisp. Place on a wire rack to cool completely.
