Turkey Steaks with Oranges
- Ingredients
- 4 Turkey steak about 150 grams each (approximately 5 ounces)
- 3 untreated Oranges (Juice of one orange)
- 2 Tbsps clarified butter
- 2 tsps Gingerbread spice
- ½ tsp Chili powder (as desired)
- 1 Tbsp sugar
- salt
- peppers (freshly ground)
Rinse the turkey steaks and pat dry. Add 1 tablespoon clarified butter to a pan. Fry the turkey steaks on both sides on medium heat. Season with salt and pepper, lift from the pan and keep warm. Zest long pieces of orange rind, then cut the oranges into medium slices. Chop the zests, add to the pan drippings with 1 tablespoon butter and melt the butter over low heat.
Add the sugar and let it caramelize briefly. Add the spices and fry briefly, then pour in the orange juice. Reduce the sauce to 2/3 of the liquid. Season with salt and pepper, add the orange slices and simmer covered 1-2 minutes. Serve the steaks with orange slices and sauce.

By the way, turkey and turkey means the same animal. The term turkey refers only to the domesticated form of the wild turkey. Therefore you can easily replace the meat with turkey breast. Serve the meat with a side dish such as a vegetable-rice pan from the oven.
