Preparation steps

1.
Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7 and line a baking tray with greaseproof paper.
2.
Fry the shallots and spring onions in hot butter. Add the mushrooms and fry until all the liquid has evaporated. Stir in the Madeira and the cream and cook on a high heat. Season with salt and ground black pepper, stir in the parsley and leave to cool.
3.
Rub the meat with salt and ground black pepper. Fry in hot oil on a high heat, then remove from the pan and leave to rest.
4.
Spread the pate onto the meat and place the mushroom-onion mixture on top.
5.
Place the puff pastry sheets on top of each other and roll out into a large rectangle (set aside some strips of pastry). Place the meat on the upper third of the pastry, brush the edges of the pastry with egg yolk and roll the turkey in the pastry pressing the edges firmly closed. Place the join at the bottom.
6.
Decorate with the pastry strips and brush with egg yolk. Place on the prepared baking tray and bake for around 45 minutes until golden brown. Then turn the oven off and leave to rest in the oven for 10 minutes. Serve with peas and carrots.
