2 tablespoons Pastry flour
2 eggs
100 grams breadcrumbs
8 Turkey cutlets (each about 80 grams)
salt
freshly ground peppers
3 tablespoons clarified butter

Preparation steps

1.

Place flour, eggs and breadcrumbs into individual plates. Whisk eggs.  

2.

Rinse turkey cutlets, pat dry, gently flatten and season on both sides with salt and pepper. Coat with flour, dip into eggs and coat wtih breadcrumbs, pressing lightly. Heat butter in a pan and cook cutlets for about 5 minutes per side or until golden brown, basting with butter often.

Drain on paper towels and arrange on plates. 

4.

If desired, serve with fries and cucumber salad.
