8 sheets white gelatin
1.333 cups milk (3.5% fat)
cup cream
1 ⅛ cups Mascarpone (80% fat)
¾ cup powdered sugar
1 teaspoon ground Vanilla
For the kumquat compote
0.333 cup powdered sugar
1 cup Kumquat
3 tablespoons Grand Marnier
1 pomegranate

Preparation steps

Soak the gelatin in cold water. Put the milk, cream, mascarpone, confectioners' sugar and vanilla into a pan and heat slowly, stirring, until the mascarpone melts. Remove from the heat. Squeeze out the gelatin, stir into the mascarpone mixture and let cool slightly. Stir through (if necessary stir over a cold bain-marie until the liquid begins to set), then pour into four (or six small) molds. Put into the refrigerator for about 3 hours or overnight to set.

For the kumquat compote, wash, dry and slice the kumquats. Put 150 ml/2/3 cup water into a pan with the icing sugar and heat. Add the sliced kumquats and simmer for about 10 minutes. Stir in the Grand Marnier. Remove from the heat and let cool.

To serve, dip the molds briefly in hot water, turn the vanilla puddings out onto plates and spoon a ring of kumquat compote around each. Halve the pomegranate, take out the seeds and scatter over the kumquats.
