2 Mangoes (peeled, stones removed and roughly chopped)
2 tablespoons caster sugar
2 cups double cream (lightly whipped)
2 Passion fruit (pulp and seeds)

Preparation steps

1.
Place the mango flesh in a blender or food processor with the sugar and about 2 tbsp warm water.
2.
Blend until smooth then pass the puree through a fine sieve.
3.
Fold the mango puree into the whipped cream with about half the passion fruit pulp and seeds.
4.
Spoon into serving bowls and top with the remaining passion fruit.
