Tropical Fruit Cookies
Chop the candied fruits finely and mix with the rum. Melt the butter.
Mix the eggs with sugar. Stir in the lime juice, lime zest and coconut flakes and fold in the flour to form a smooth batter. Stir in the chopped candied fruits and melted butter.
Place small piles of batter using 2 teaspoons on a baking sheet lined with parchment paper. Bake in a preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) for about 10 minutes.
Remove the baking sheet from the oven and let the cookies cool before serving.
