- ¼ cup Grenadine
- ¼ cup caster sugar
- ¼ cup water
- ⅔ cup Strawberries (hulled)
- ⅝ cup Vodka (chilled)
- 1 ⅔ cups tropical Fruit juice (chilled)
- ½ lemon
- 2 Tbsps granulated sugar
- 1 Star fruit (cut into slices to garnish)

Preparation steps

Place the sugar and water in a small saucepan and heat gently over a medium heat until the sugar has dissolved; swirl the saucepan to help dissolve it if necessary.

Meanwhile, puree the strawberries in a mixing bowl using a potato masher. Strain through a fine sieve into a small bowl.

Cook the sugar syrup for a few minutes over a reduced heat it has reduced a little. Remove from the heat and leave to cool a little.

Combine with the strawberry puree, then add the grenadine. Mix well, then cover with the bowl with clingfilm and chill until cold; 3 hours.

Rub the rims of 4 highball glasses with the lemon half, then dip in the granulated sugar. Divide the strawberry puree and grenadine mixture between the highball glasses.
6.
Pour 35ml of vodka on top of the strawberry puree, then pour the tropical fruit juice on top of the vodka.
7.
Place a slice of star fruit on the rims and garnish the drink with a few sprigs of mint leaves before serving.
