Trifle with Mascarpone and Strawberries
Rinse the strawberries and pat dry. Halve 4 and set aside and cut the rest into quarters. Mix with 2 tablespoons sugar and set aside.
Cut the vanilla bean in half lengthwise and scrape out the seeds. Stir in the mascarpone and quark. Whip the cream with the remaining sugar until stiff and fold into the mascarpone cream mixture. Break the ladyfingers into small pieces.
Spoon1 tablespoon cream filling each into four small glasses and top with the ladyfingers and strawberries. Top with the remaining mascarpone mixture and top each with 1 halved strawberry. Garnish with mint and serve.
