Tramezzini Sandwiches with Radish Quark
Mix the quark with creme fraiche and mayonnaise, and season with salt and pepper. Rinse the radishes, brush and dice. Finely chop the scallions and stir along with the radishes into the quark cream. Add chives and cress into the quark cream.
Spread the quark cream over 4 tramezzini bread slices, leaving the margins. Top with the remaining slices to form the sandwich and press firmly. Cut the sandwiches diagonally into halves and serve wrapped in napkins.
