Preparation steps

1.

Chop chocolate, place into a metal bowl and melt over hot (not boiling) water bath, stirring. Remove from heat.

Whisk egg with egg yolk over hot water bath until white and creamy. Remove from heat and combine with melted chocolate. Cool mixture in cold water bath. 

3.

Beat heavy cream until semi-stiff. Fold half of cream into chocolte mixture, then fold in the rest. Pour into serving molds and refrigerate for 3 hours.

4.

To serve, dip a spoon in hot water and place mouss balls onto plates. Garnish with shaved chocolate and serve.
