Traditional German Plum Cake
Place the flour in a bowl and make a well in the center. Crumble in the yeast and sprinkle in the sugar. Gently heat the tofu and water, stirring, until lukewarm. Add 4 tablespoons of the tofu mixture to the well and mix with the yeast. Sprinkle a little flour over the liquid, cover and let rise for 15 minutes. Add the remaining tofu mixture and salt, knead until the dough begins to bubble and let rise, covered, for 1 hour.
Rinse the plums, halve, pit and cut into wedges. Roll out the dough and use to line a greased rimmed baking tray. Arrange plums on top and bake in the oven at 180°C (approximately 350°F) for 40 minutes. Remove from the oven and let cool. Mix the honey and plum juice together, gently warm then brush over the plums.
