Tower of Apple and Red Cabbage

- 1 small Red cabbage
- 2 great white onions
- 2 large Apple
- salt
- peppers
- powdered sugar
- butter
Rinse the cabbage. Remove the outer leaves. Remove the leaves from the stalk and blanch in plenty of boiling salted water for about 8-10 minutes. Drain on several clean kitchen towels.
Peel the onions and cut into rings. Blanch the rings of 1 onion in plenty of salted water for 5-6 minutes. Drain on paper towels. Peel the apples, cut out the core and cut into rings. Cook the apple rings with about 100 ml (approximately 1/2 cup) of water in a small saucepan over medium heat, covered until soft.
Heat 2 tablespoons of butter in a pan and cook the remaining onion rings until golden brown. Dust with powdered sugar. Let the sugar caramelize while stirring and remove the onions from the pan immediately.
Cut the cabbage leaves into quarters. Place a metal ring on each plate. Layer the cabbage leaves, onion rings, caramelized onion rings and apple rings in the metal rings. Complete with caramelized onions. Remove the metal ring, season the towers with salt and pepper and serve to taste with a little melted butter. Serve with a hearty roast pork.
