Tortellini Gratin with Zucchini
Cook the tortellini in boiling salted water according to package directions until al dente, then drain. Rinse the zucchini and grate coarsely. Melt the butter over medium heat, add the cream and with simmer for 2-3 minutes over very low heat. Add 3 tablespoons of Parmesan and season with salt, pepper and nutmeg.
Mix the tortellini with cream sauce and zucchini. Distribute the Tortellini into 4 ramekins. Preheat the oven to 200°C (approximately 400°F). Crumble the day-old bread. Sprinkle the bread over the tortellini and add a little more Parmesan. Bake for approximately 15-20 minutes until the crumbs have browned and the sauce is bubbly, remove from the oven and serve immediately.
