Preparation steps

1.

Rinse basil, shake dry, strip leaves from stems and set a few leaves aside as garnish.

2.

Blanch tomatoes in boiling water, rinse with cold water and let drain. Remove skins and cut tomatoes into large pieces. Place tomatoes in a large pot with bay leaves, basil and tomato paste. Cook over low heat until tomatoes have softened, 10-20 minutes.

In a blender, puree tomato mixture until smooth, adding additional water as desired. Strain through a sieve, season with salt and pepper and let cool.

4.

Fill 4 glasses with ice and top with tomato drink. Season with pepper and garnish with reserved basil leaves.
