Toasted Nut and Plum Cookies
Preheat the oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper.
Rinse the plums, cut in half, remove the pits and slice thinly. Heat the cinnamon, brown sugar and cognac in a small saucepan over medium heat for about 2 minutes, until the brown sugar has melted. Remove from heat and allow to cool.
Toast the nuts in a dry skillet until fragrant. Allow to cool and chop finely. Combine the flour, butter and sugar with the melted brown sugar mixture. Mix with hands until smooth and form into small balls.
Beat the egg whites with a pinch of salt until stiff. Dip the balls into the egg whites then roll in the chopped nuts. Place onto the prepared baking sheet. Make a small indentation in each cookie with the handle of a wooden spoon and place 2 plum slices in the indentation. Bake for 15 minutes, until golden brown. Remove from the oven, cool on a wire rack and serve.
