Toast Sardine Spread
Rinse the anchovies and pat dry. Heat 1-2 tablespoons of oil in a pan and saute the anchovies on low heat. Add 1-2 tablespoons of water, cover and let stew over low heat for 6-8 minutes, then let cool.
Puree the sardines with capers, lemon zest, 1-2 tablespoons of the remaining sauce from the pan, 1 tablespoon of olive oil, lemon juice and season with salt and pepper. Allow the spread to cool slightly, then serve with freshly toasted bread. Pair with white wine.
