1 Kitchen scale, 1 Teaspoon, 1 Mixing bowl, 1 Wooden spoon, 1 Cutting board, 1 Large knife, 1 Tablespoon, 1 Plastic wrap, 1 Hand mixer, 1 Rolling pin, 1 Cookie cutter, 1 Baking sheet, 1 Parchment paper, 1 Wire rack, 2 Bowls, 1 Pot, 1 Wooden spoon, 1 Tea strainer, 1 Cookie tin, 1 Paper towel

Preparation steps

Whisk both flours with baking powder and espresso powder in a mixing bowl. Sift the cocoa powder into the bowl and whisk to combine.

Cut the cold butter into small cubes. Add butter, sugar, vanilla sugar, salt and egg to the flour mixture and mix to combine. Knead with the dough hook of a hand mixer until smooth. If necessary, knead briefly with floured hands to ensure a smooth dough.

Shape the dough into a ball, flatten slightly, wrap in plastic wrap and chill for at least 1 hour in the refrigerator.

Roll out dough on a lightly floured surface roll to about 2 mm (approximately 1/8 inch) thick. Cut out stars with a cookie cutter. Gather together scraps, knead dough again, roll out and cut out more stars.

Line a baking sheet with parchment paper. Put star cut-outs on sheet and bake on second rack from the bottom of preheated oven at 180°C (fan 160°C, gas mark 2-3) (approximately 350°F/convection 325°F) until firm to the touch, 9-10 minutes. Let cool slightly and transfer to a wire rack to cool completely.

Meanwhile, chop the couverture, place in a bowl and melt over a pan of simmering water (or in the microwave), stirring until smooth. Allow to cool slightly.

In another bowl, beat the mascarpone until smooth with the hand mixer. Sift in the powdered sugar and mix to combine. Add couverture and almond liqueur or syrup and mix until smooth.

Use a teaspoon to dollop mascarpone mixture onto flat side of 40 stars. Place remaining stars on top, pressing lightly, and let set. Dust the stars with powdered sugar or cocoa powder, as desired.

Store in a pastry box between layers of paper towels. Stars will keep in the refrigerator for about 2 weeks.
