- 3 egg yolks
- ¼ cup white sugar
- 2 teaspoons vanilla extract
- 1 ⅛ cups Mascarpone
- 24 Ladyfinger
- 1 ½ cups brewed Coffee
- 1 tablespoon unsweetened cocoa powder

For Tiramisu cheese filling:

In a medium bowl, beat yolks with sugar and vanilla until smooth and light yellow. Fold mascarpone into yolk mixture. Set aside or refrigerate while poaching the pears.

For Poached Pears:

In a large saucepan, heat the water and sugar until warm and the sugar is dissolved. Add any of the optional additions that you wish. Slide in the pears.

Keep the liquid at a very low boil and gently simmer the pears until cooked through, 15 to 20 minutes, depending on the pears.

Remove from heat and let the pears cool in their liquid.

For Tiramisu:

Dip ladyfingers briefly in coffee (do not completely soak through) and arrange in six individual serving glasses or arrange 12 of them in the bottom of an 8x8 inch dish. Layer with cooled pears. Spread half the mascarpone mixture over the ladyfingers. Soak remaining ladyfingers, repeat layer; ending with mascarpone. Cover and chill 1 hour.
