Preparation steps

Mix the espresso with cognac for the soaking syrup. Beat egg yolks and sugar until thick and light in color. Slit vanilla pod lengthwise, scrape the seeds into the yolk mixture and add the mascarpone gradually. Spread a rectangular cake pan with a little some of the mascarpone cream. Dip 1/3 of ladyfingers in the espresso-cognac mixture and make a layer over the cream.

Continue layering the ladyfingers and mascarpone cream in the same way, ending with a layer of the mascarpone cream. Cover with plastic wrap and refrigerate for at least 2 hours.

To serve, dust thickly with cocoa, cut in pieces, and serve on dessert plates with chocolate sauce.
