Preparation steps

Heat the oven to 200°C (220°C in a fan oven), 400ºF, gas 6 and line a baking tray with grease proof paper.

Melt the chocolate in a bain-marie, then remove from the heat and stir in the cold butter, a few pieces at a time. Stir until creamy.
3.
Beat the egg whites until stiff peaks form. Beat the egg yolks with the sugar until pale, thick and creamy.
4.
Carefully stir the egg yolk mixture into the cooled chocolate and butter mixture. Then fold in the beaten egg whites and sieve the flour over the mixture and carefully fold in.
5.
Spread the mixture smoothly in the prepared baking tray and bake in the middle of the oven for 20-30 minutes.
6.
Leave to cool on the tray, then cut into pieces and remove the baking parchment. Dust the slices with icing sugar.
