½ cube fresh Yeast (21 grams or .75 ounces)
250 grams Pastry flour
½ tsp salt

Preparation steps

Dissolve yeast in 160 ml (approximately .6 cup) lukewarm water. Add flour and salt and knead into a smooth dough. Sprinkle with flour, cover with a damp kitchen towel let rest for about 20 minutes.

Let rest for another 60 minutes. Every 20 minutes, knead on a floured surface with the palm of your hand, shape into a rectangle and fold twice.

Preheat the oven to 240°C (approximately 475°F).

Put dough on a floured surface, shape 3 thin logs, cover with a damp cloth and let rise again for 15 minutes more. Brush with egg yolk and sprinkle with cumin. Place on a baking sheet lined with parchment paper and bake until golden brown, about 20 minutes. Remove and serve as desired.
