Preparation steps

Mix together the marinade ingredients and pour half over the chicken pieces. Leave to marinate for at least 4 hours or overnight.

Meanwhile, use a vegetable peeler to cut the carrot and courgette into ribbons and mix with the peppers. Toss with the vinegar, sugar and salt and leave to lightly pickle.
3.
Skewer with soaked wooden kebab sticks.

Griddle over a high heat until blackened in patches and cooked through – 6-8 minutes.

Serve with the pickled vegetables alongside.
